Guar gum E412.
Guar gum is extracted from a leguminous plant and comes as a powder. It is used as a thickening, stabilizing and emulsifying agent thanks to its smooth texture and gelling properties. Is is generally used to thicken sauces, soups, but is also added to ice creams, sorbets and frozen food to reduce the formation of crystals. In bakery, the guar gives moist, retains the water and freshness of the product. Finally, it is used in low-fat products playing the part of the starch, sugar and fat.

Guar gum has several advantages : it is easy to use (the same quantity for all your recipes), it is insensitive to temperature changes or the presence of salts, and it is cheap.
