Agar agar is a natural vegetal thickening agent, that can replace animal gelatin in many recipes : aspic, jelly, terrine, mousse and chantilly, panacotta, cream, bavaroise, entremet, ...etc. Soluble in hot liquid, the gel is obtained wheen cooled down. Beware, agar agar is 8 times more powerful than gelatin!

Direction of use : 4 to 6 g/L of preparation. Add to your liquid preparation, mix it to avoid lumps. Boil and heat up 2-3 min. Let it cooled dow in the fridge or at room temperature. The gel is obtained at 40-50°C.
