Papua New Guinea vanilla comes from the variety "vanilla Tahitensis" as the Tahitian vanilla. However, it is blacker and more slender than the latter, with woody and peppery flavours of fruit, with notes of tobacco, gingerbread and roasted nut. Very rich in vanillin, the formation of frost (natural vanillin) is frequent. Note that the Papua New Guinea vanilla has an excellent conservation. Considered as a worthless vanilla for years, this vanilla has become a much sought-after good.

The beans from Papua New Guinea have a unique flavor that combines the sweet creaminess of Madagascar Bourbon vanilla with the fruity and floral notes of Tahitian vanilla. Because of its fruity hints, Papua New Guinean beans complement the flavors in fruit dishes nicely, making it perfect for use in fruit sauces, pies, beverages and more. Or, use it in traditional applications calling for vanilla. Due to its coarse and spicy flavours, you can also use it in fish or white meat dishes.
