Sudachi juice 100 mL
Another star of Japanese citrus, Sudachi is a variety of lemon harvested still green, with acid taste tempered by a level of sugar much higher than lemon. The taste is typical: less tangerine than yuzu, it evokes the curious sensation of adding acid and fruity sugar that we have with green grapefruit from Tahiti, with peppery notes.
Applications : it is perfect in sorbets, bavarois, mousses, creams, ...etc. It perfectly flavours ganaches, choolates and cocktails. Used as a condiment, it matches well with marinades, grilled meat and fish.
